My tochitura is neither Moldovan nor Wallachian, but just a tochitura, as I wanted to do it.
If we were to look at DEX, tochitura is "a dish traditionally made on the occasion of cutting pork, from finely chopped fatty meat, fried with onions in a pan, with the appearance of tochitura (= scallops obtained by melting bacon). As a Romanian gastronomic specialty , is made from small pieces of pork, organs and sausages, fried in a frying pan, served with a garnish of polenta, with mesh and grated cheese on top. "
But, each house with its own habits, including culinary and so look and a lot of different recipes.
